Yes, Chef! 👨‍🍳

This month, the Pullman Chamber is proud to recognize local restaurant Birch & Barley in another Member Spotlight!

Recently, Executive Director Pete Chittenden had the opportunity to play chef at the restaurant when Owner Jill Bielenberg and General Manager Hannah Sprague gave the Pullman Chamber staff a tour of the kitchen and dining space.

“Being behind the scenes to see all the action was invigorating,” shared Chittenden. “There’s nothing like feeling the heat of the stovetop flames and seeing the bustle and energy of the service team at work in the kitchen.”

Located on Bishop Boulevard, Birch & Barley offers American fare with Southern flair. Founded in 2012 by a small group of friends and family, the restaurant set out to create a one-of-a-kind culinary experience on the Palouse. The menu features local favorites like Cougar Lobster Mac & Cheese and Ragin’ Cajun Pasta, along with weekly specials that give guests plenty of options to choose from. Beverage offerings are equally impressive, featuring 14 craft beer taps, 80 whiskey options, a seasonal craft cocktail menu and the restaurant’s famous Bloody Mary bar.

“When you’re talking about favorite restaurants on the Palouse, I have several. However, ranked amongst the very top of my list is, of course, Birch & Barley,” said Chittenden.
